So, I've been trying to eat better. I'll be honest. I DESPISE making salads. I love to eat them but I don't know why I don't like to cut everything up to make them. I've tried all the tricks like cutting everything up at once and that works great for me but then inevitably things go bad faster--cucumbers get soggy, etc. Anyway, this salad was particularly yummy. When I finished it with the salmon, I always tell myself I need to do that more often. As if....
We've had some weird weather lately. The other night I was chasing my outdoor table cushions in the wind. Later that night I caught Pippa trying to balance on the pile. I was certain she couldn't make it work but she did! Such a princess....
I went up to Estes Park by myself to clean our cabin for guests to arrive. After cleaning I stopped to get a Subway and sit by the river. That place is so wonderful.
We had dinner at friends' house this week. They have horses. This little guy was cute! Here B is holding his reigns. I wish I wasn't allergic. I pet him for awhile and then broke out in bumps on my arms. I soooo wanted to pet him longer. He was awful cute.

It took me a minute to figure out that you live in Fort Collins too! That IS the stretch of I-25 you take to Denver (only heading North). I don't normally think it looks that good either--must be the magic of Intstagram. Ha!
That salad looks delicious! I love fruit in my salad, but only if I don't make it myself. Is that weird? :)

Looks like a great week! I just came across the idea of salads in mason jars and everyone swears that nothing gets soggy/mushy. I haven't tried it yet but I am intrigued. Thanks for stopping by my little blog :)
Beautiful forest+bridge snapshot! That salad looks delish too. I always find it hard to have all of the vegetables on hand to make a truly great+big salad.
